52. Crispy Green Peas Fry (For Professional kitchen)
A crunchy, lightly salted green pea snack made from frozen peas, fried and finished in the oven for extra crispiness.
Ingredients:-
* 1 kg frozen green peas
* Oil, for frying
* Salt, to taste
Equipments: -
* Strainer
* Large tray
* Clean cotton cloth or Duster or Torchon
* Deep frying pan or Casserole
* Baking tray
* Baking paper
* Spatula
Method: -
Step 1: Thaw and Drain the Peas
1. Take the frozen green peas directly from the freezer.
2. Place them in a colander or strainer.
3. Rinse thoroughly under cold running water for 10–15 minutes.
4. Allow the peas to drain completely in the colander for 20–30 minutes.
Step 2: Dry the Peas
1. Spread the drained peas evenly on a large tray lined with a Torchon cloth or clean cotton cloth.
2. Arrange them in a single layer so excess moisture can evaporate properly.
3. Leave the peas to dry for at least 1 day.
NOTE: You can keep them inside the fridge or at room temperature, depending on how warm the room is.
4. The peas should feel dry before frying.
Step 3: Fry the Peas
1. Heat the oil to approximately 140C to 180C in a deep frying pan or casseroll.
2. Carefully add the dried peas to the hot oil in batches.
3. Fry for 2–3 minutes.
NOTE: When the peas are added, the oil may splutter and rise rapidly because of the remaining moisture. Do not panic. Gently blow some air with your mouth and stir slowly so the oil settles back down safely.
4. Repeat until all the peas are fried.
Step 4: Oven Finish
1. Preheat the oven to 190°C.
2. Spread the fried peas on a baking tray lined with baking paper.
3. Flash for 3 minutes.
4. Remove the tray and mix the peas gently with a spatula.
5. Return to the oven and bake again at 190°C for another 3 minutes
6. Sprinkle salt over the hot, crispy peas.
2. Toss well and allow them to cool slightly.
Tips: -
1. Serve as a appetiser or a garnish element for your plating and dishes.
2. Here I served as a texture of green peas on top of the fish.
