 53. Leek gel (For Professional Kitchen)




A bright, intensely green leek gel that can be served either as set gel cubes or blended into a smooth piping gel.


Ingredients ( For 1 ltr Base)

  •  Green tops from leeks (as needed to obtain 1 L blended leek liquid)
  •  Ice, for ice bath
  • Rock salt, generously for blanching water
  • Agar agar - 10gm (1%)
  • Zest of 1 lime (green lime only, no juice)


Preparation:-

  1. Prepare the leek greens.Use only the green part of the leeks.
  2. Slice roughly (2–3 cm pieces)
  3. Wash thoroughly in several changes of cold water until completely free of sand and grit.
  4. After that Blanch the leek in rolling boil water seasoned with rock salt.
  5. Blanch the leek greens for 2–3 minutes, until tender and vividly green.
  6. Immediately transfer to an ice bath to stop the cooking and preserve the color.
  7. Once the leeks are completely cooldown drain the chilled greens well.
  8. Blend the green leeks in a blender, Robot Coupe or thermomix with a small amount of the blanched liquid—just enough to obtain a perfectly smooth, pourable liquid.
  9. After Strain it through a very fine strainer to obtain a perfect texture.
  10. Referegerate completely.

Making the Gel

  1. Combine the 1L  leek liquid with 10 g agar agar
  2. Zest of 1 lime
  3. Whisk well while cold.
  4. Bring to a full boil, whisking continuously.
  5. Boil for 30–60 seconds to fully activate the agar.
  6. Pour into a shallow tray and refrigerate until completely set.


Two finishing options

A. Set gel

Cut into cubes, rectangles, or any desired shape for plating.

B. Smooth piping gel

  • Break the set agar gel into pieces.
  • Blend until completely smooth.
  • Transfer to a piping bag or squeeze bottle for clean dots and lines.


Tips :-

  1. Agar ratio: 10 g/L gives a firm yet blendable gel (1%).
  2. Use lime zest only; the juice would dull the fresh leek flavor and affect the chlorophyll.
  3. Rapid chilling after blanching is essential for maintaining the vivid green color.
  4. The blended gel holds well refrigerated for 3 days in a sealed container.
