7. Malabar Chicken Dhum Biriyani
-Ingredients
*Chicken pieces 1/kg
*Ginger garlic paste
*Salt
*Chilly powder
*1/2 Lemon
*Turmeric powder
*Coconut oil
*Onions
*Tomato
*Malabar Biriyani masala(Fennel seed 1 tsp,Poppy seed 1 tsp,Cinnamon stick,clove 1/2 tsp,1/2 tsp of gram)
*6 chopped green chilly
*Curd
*Ghee
*Bay leaf
*Cinnamon stick
*Clove
*Gram
*Basmati rice 1 1/2 kg
*Coriander leaves
*Mint leaves
*Deep fried Cashews,Dry grapes and chopped onions
-Preparation
1.Take the chicken pieces in a bowl add ginger garlic paste,salt and chilly powder for necessary
2.Now add a pinch of turmeric Powder and squeeze 1/2 a lemon to it
3.Manirate it well and keep it aside
4.Now add coconut oil to a pan for necessary and add 2 (or) 3 chopped onions
5.Now add 4 tsp of ginger garlic paste and 1 tsp of salt
6.Then add 6 chopped green chilly and 1 chopped tomato
7.Saute it well till it becomes light brown and then add the chicken pieces into the pan.
8.Drizzle some water and add 3 tsp of curd
9.Add some ghee and Saute it well till the chicken gets cooked well
10.After the chicken gravy is cooked take a seperate pan and add 3tsp of ghee,1 tsp of coconut oil,1 bay leaf, 1 cinnamon stick and clove
11.Roast it well and add 1 n 1/2 kg of basmati rice to the pan
12.Then mix it all together till the rice make crackling sound
13.Now add water (1 n 1/2 cup of water for 1 cup of rice),Salt (for taste) and Ghee for necessary
14.Once the rice get half boiled take a seperate kadai and fill the chicken gravy masala at the bottom
15.Then fill the half boiled rice over it and add chopped coriander leaves,mint leaves
16.Now add deeply fried Cashew,Dry grapes and Onion
17.Now put it in dhum for 20 to 30 mins using a Tawa under and keep some heavy weight above the kadai
18.Cook the rice well
