1) Fried Garlic Rice:-
*Long grain Rice - 500gm
*Garlic slices - 50gm
*Carrot Cubes- 50gm
*Spring Onion - 5nos
*Salt - as req
*Soy Sauce - 1tbspn
*Rice vinegar - 1tbspn
*Sugar - One pinch
*Green chilli (FC) - 5nos
*Veg oil - as req
*Water - as req
*Clove, Cinnamon, Pandan leaf - 1no each
Preparation:-
1. At first wash the rice thoroughly
2. Then take a vessel and add water as required followed by that add 2 tbspn of oil to the water and bring it to a boil.
3.Then add the clove, Cinnamon, and Pandan leaf. Once the water is ready at boiling temperature add the rice and cook it to 80% done.
4. Meanwhile fry the Fine slices of garlic to a crispy flake.
5. Once the rice is ready strain the excess water and keep the cooked rice aside.
6. Then take a wok/pan and keep it on the high flame at first add 4tbspn of oil.
7. Followed by that add Carrot, Green chilli and toss it for 5 min then add the Rice vinegar and Soy sauce.
8. Now add the cooked rice with the fried garlic into the wok/pan and add salt to taste give it a gentle toss all together for 5 minutes by adding sugar last.
9. At last add the chopped spring onion and serve hot.
2) Shredded Pot Beef: -
*Whole beef chunk - 300gm
*Salt - as req
*Whole pepper - 8 nos
*Coriander leaf stem - 1/2 bunch
*Brown sugar - 1tspn
*Garlic paste - 2tbspn
*Oil - as req
*Coriander leaves FC
*Tomato Ketchup - 2tbspn
*Chilly powder - 2tbspn
*Fried onions - 1 hand full
Preparation:-
1. At first clean the beef chunk and keep it aside
2. Then take a Pot/Pressure cooker and add water as req to cook the beef chunk.
3.Next add Salt, Whole pepper, Coriander stem & chilli powder.
4. Now gently place the beef into the pot/pressure cooker and cook it for 30 mins approx until fully done silky soft.
5. After that using a dry hand shred the beef into threads. Save the beef stock for future use if you want.
6. Then take a pan/wok add oil and followed by garlic paste.
7. Once the raw smell goes off add tomato ketchup, Fried onions, Brown sugar and saute` it.
8. After that add the shredded beef into the same pan/wok then add brown sugar & salt to taste.
9. Give it a gentle mix all together and finish it with some FC Coriander leaves.
10. You can add a few tbspn of beef stock to the shredded beef if you want (Optional).
