                                                                               44. Fried Chicken





Ingredients:- 

*Chicken- 1kg (Your preferred cut)

*Salt- as req

*Hung curd- 500gms

*Garlic powder/ Garlic paste- 100gms

*Pepper powder- asreq

*AP Flour/Maida- 700gms

*Corn flour- 400gms

*Potato starch- 200gms

*Paprika powder/ Kashmiri chilly powder- 30gms

*Baking powder- 2 tspn 

*Egg- as req 

*Refined Rice bran/Sunflower Oil- For deep fry

*Deep fryer/ Pressure cooker


Preparation:- 

(1). Chicken Marination:- 

1. Take the 1kg chicken in a separate bowl and add 500gms of Hung curd to it. Then add salt asreq and garlic powder/paste to it. 

2. Then add pepper powder as per your preference and mix it overall together and let it rest for some time in the refrigerator. Minimum 4 to 5 hours of resting is a must.


(2). Breading Flour:-

2(a). Bowl 1:-

1. First, add 350gms of AP Flour to the first flour. then add salt as req.

2. Followed by that add 200gms of Cornflour and 100gms of Potato starch. Also, add 1tspn of baking powder. 

3. Then add 20gms of pepper powder and 30gm of paprika/chilly powder to the bowl. 


2(b). Bowl 2:- 

1. First, add 350gms of AP Flour to the first flour. then add salt as req.

2. Followed by that add 200gms of Cornflour and 100gms of Potato starch. Also, add 1tspn of baking powder. 

3. Then add 20gms of pepper powder to the bowl. 


(3) Egg wash:- 

1. Break and mix well as many eggs you required to wash 1kg chicken of your preferred cut. 


(4) Fried Chicken Preparation 

1. Take 1 Piece of Chicken → Dust it in Bowl 1 → Then Egg wash it properly → Then Dust it in Bowl 2. (Dust the chicken properly make sure there is no extra flour in the coating).

2. Make sure the oil in the deep fryer is at the smoking hot point. 

3. Then drop the chicken pieces one by one into the deep fryer and fry them at 170C for 15 Minutes. (Don't overcrowd the fryer) 


Tips:-

1. The more time you rest the chicken the more tender and juicy it will be.

2. You can also deep fry using the pressure cooker without a whistle on the top. 

3. Don't overcrowd the Vessel.

4. Most important thing is to dust the chicken properly. 

5. Don't use other oils to fry. 

6. Serve it Hot with your favorite dip & Carbonated drink.
