47. Mutton stew
Ingredients :-
1. Mutton curry cut - 500gm
2. Ginger and garlic paste - 50gm
3. Salt - as req
4. Pepper corns - 10 nos
5. Bay leaf - 2
6. Pandan leaf - 1no
7. Thick coconut milk - 200ml
8. Beans - 5nos (Macedoine Cut)
9. Carrot - 2nos (Macedoine Cut)
10. Potato - 2nos (Cut it into 1/4)
12. Garam masala - 5gm
13. Coriander leaves - 3 with stem
14. Curry leaves - 10nos
15. Coconut oil - as req
16. White and black pepper powder - as req
17. Cinnamon stick - 2nos
18. Cloves - 4nos
19. Cardamom - 3nos
20. Star anise - 3nos
21. Mutton tallow/fat or Ghee - 10gm
22. Onion - 300gm
Preparation :-
1. First wash the mutton and mix salt, ginger & garlic paste in it and let it rest for 2mins.
2. Now take a vessel and add some Coconut oil and tallow or ghee followed by that pandan leaf, Chopped coriander stem, curry leaves, dry spices and pepper corns in it let it get saute' well.
3. In the meantime take a pressure cooker and add 3tbspn of oil.
4. Now add the mutton in the pressure cooker and cook it for 3 whistle.
5. Once the pressure is down open the lid and add the potato, beans and carrot into it and cook it all together until the 4th whistle comes.
6. Now once it's cooked transfer the cooked mutton and veggies into the vessel. And give a gentle mix.
7. Keep the flame very low and let all the seasoning, fat, veggies and meat get's cooked together.
8. Now add the 200ml fresh coconut milk and add Garam masala, salt, white & black pepper powder according to your preference into the same vessel and give a mix.
9. Now once it's ready to hit your nose with the nice elegant flavour and smell you can see the rich fat and oil gets seperating on the top.
10. That indicates the stew is ready to serve and at last add some fine chopped coriander leaves and Serve it hot with breads and flavoured rice of your choice.
Tips:
1. Mutton fat is a optional ingredient you can use ghee as well.
2. Cooking the veggies and meat together is a must.
3. Add meat with bone as it give richness to the stew.
4. Make sure your meat is young and tender if not you should cook it more According to the meat.
